Carefully selected local fish, savoured to the full in your room
We want to see our guests smile and say “delicious”. With that in mind, we buy fresh local fish at the local fishing port every morning. Dinner is served in your room, so you can take your time in a private setting. We use seasonal ingredients from the local area and change our menu with the seasons. Spring, summer, autumn and winter: enjoy a different side of Boso's food each time you visit.
Boat-platter sashimi and abalone, in our standard plans
Boat-platter sashimi and live abalone grilled at the table, which are usually extra-charge items, are included in our standard plans for all guests to enjoy. Savour the abalone grilled before your eyes and the many kinds of local fish from the fixed nets, each at its very best.
The secret of our sashimi

The finest fishing grounds
The Kyonan coast, where Kinokuniya stands, is where the Kuroshio Current meets the nutrient-rich waters of Tokyo Bay: a superb fishing ground where a wide variety of fine fish is landed all year round.

How the fish are caught
For our sashimi we use only local fish landed from the fixed nets of Katsuyama and Hota. Fish caught in fixed nets are barely bruised and remarkably lively.

Only the best fish, hand-picked
The owner holds bidding rights at the fishing port, so he can judge the fish with his own eyes where the catch is landed and buy freshly caught fish directly.
Buying the fish is the owner's own job. Every morning he targets only “the finest fish for that day's dishes”, which is why the quality and freshness of our fish are in a different league.
